Patricio’s Wiener Schnitzel
I love Wiener Schnitzel, delicious with a Mushroom sauce, you can either use packet breadcrumbs white or Golden, I like to make my own which is such an easy process and a lot cheaper, as an accompaniment I serve with Mashed potato or au gratin potatoes plus any vegetables that takes your fancy
Making simple Breadcrumbs
you need 3 slices of white/seeded or Wholemeal bread, place them in a hot oven at 220’c for 5 minutes or until they are dry and firm but not toasted, then break them into 2”squares, place them in a food processor/blender to make perfect breadcrumbs.
Ingredients
150ml Olive oil
Breadcrumbs
Sliced Veal (if veal is not your thing try pork steaks as a lovely alternative)
Parsley (Chopped fresh or dry)
3 Eggs
Plain flour
Salt & Black pepper for seasoning

How to make Wiener Schnitzels
Set the oven on Temperature 180'C
Take each individual piece of veal or pork, wrap in clingfilm to hold them together, this also stops any splatter mess, tenderise with a hammer or rolling pin and enjoy yourself whacking the life out of them until they are bigger in size but thin, pork 1/4" thick, thinner if using veal.
now take 3 large bowls, 1 with flour, another with beaten eggs, and the final one add the seasoning & Parsley into the bowl with the breadcrumbs and mix thoroughly
pick up a piece of Pork/Veal dip into the flour with one hand, then into the Egg, making sure to cover them completely, then in the third bowl completely cover the pieces in the Breadcrumb, repeat until all Schnitzels are covered & ready to cook.
Put 2 or 3 Wiener Schnitzels 'at a time, in a frying pan with Olive oil, heated to medium, keep your eye on them to make sure they do not burn and turn over after approximately 3 minutes cooking the other side, until almost cooked, lay all Schnitzels on to a tray ready to go into the oven to finish.
place the tray into the heated oven for 8-10 minutes. Serve with whatever potato that you decided on, spoon Mushroom sauce over. or serve in Separate little bowls.
